Kavuni arisi Adai/Black rice lentil crepes

Kavuni Arisi Adai/ Black rice lentil crepes - Black rice or kavuni arisi is one of the traditional rice variety available. It is nutritious , has higher level of antioxidants, known to prevent cancer and reducing blood sugar levels. The presence of anthocyanin in black rice makes it a super food. It is widely consumed by nattukottai chettiars of chettinad region. They prepare kavuni arisi inippu with this rice. It is a dessert and is prepared on all special occasions. You can make idli, dosa, puttu(steamed rice cakes),idiyappam ,adai with this rice.


Key ingredients:

Rice - Black rice, Raw rice

Lentils - Tuvar dal, chana dal, urad dal, moong dal

Spices - saunf, chillies, hing,ginger are used.

Onion - bellary variety or shallots can be used.

Coconut - fresh or dessicated ca be used.

Fats - Any oil can be used.

Leaves - Curry leaves ,coriander leaves are used.

Method:

  • Soak rice and lentils separately. Grind and mix them together.
  • Add veggies, spices.
  • Cook in a tawa.

Accompaniments:

Any spicy chutney and sambar or Dal's goes well with the dish.

Pickle ,thokkus are also good.

Storage:

The batter can be refrigerated and used.

Variations:

You can also add 1 or 2 cloves of garlic with the dals while grinding.

Substitution:

Shallots can be substituted for onion. If so, take 1 cup of shallots, remove the skin , chop finely and add them to the batter.

Pre- preparation:

Wash black rice and raw rice . Soak them together for 4 hours minimum. Soak dals separately with red chillies.





Recipe:

Total Time Taken: Soaking  + grinding time: 4 hours 15 minutes +  cooking time: 5 minutes = 4 hours 20 minutes.

1 cup = 200ml

Ingredients:

Black rice - 1 cup

Raw rice - 1 cup

Tuvar dal - 1/4 cup

Chana dal - 1/4 cup

Urad dal - 1/4 cup

Moong dal - 1/4 cup

Onion(large) - 1

Coconut gratings - 1/4 cup

Ginger - 1/2 "

Green chillies - 3

Red chillies -6

Curry leaves - 1 sprig.

Asafoetida/hing - 1/4 tsp

Salt - to taste

Oil - to drizzle

Directions:

1. Grind the dals together with red chillies, green chillies, ginger, saunf.



2. Grind the soaked rice little coarsely. Mix the dal and the rice batter.

3. Add salt. Chop the onion finely.

4. Add chopped onions, coconut gratings, curry leaves , coriander leaves, hing.Mix well.

5.Heat a dosa tawa/skillet. Spread 1 or 2 ladleful of batter into a thin crepe or thick pancakes according to your preference. I prefer thin.



6. Drizzle some oil. Cook for a few minutes. The edges will start coming away from the tawa.

5. Flip over. Again drizzle some oil. Cook the other side for a few minutes. 


6. Remove from heat and serve.






Notes:

  • Black rice tastes a bit chewy, so i added raw rice to make it crispier. You can decrease the amount of raw rice to 1/2 cup also.
  • You can simply avoid adding raw rice if you are ok with chewy adais.
  •  Add some water if the batter is too thick.
  • Black rice may cause a little discomfort in the stomach when taken for the first time.
