Blue berry cake



The recipe is adapted from all-rounder Surya Thangaraj's YouTube cake videos


Recipe:

1 cup = 250ml

1 tsp - 5 ml

For the blueberry sponge:

Dry ingredients:

Refined flour - 1 cup

Baking powder- 1 tsp

Baking soda - a pinch 

Powdered sugar - 1 cup

Blueberry - 1 box

Wet ingredients:

Large eggs - 3

Oil or melted butter - 30 ml

Vanilla essence - 1 tsp

Blueberry crush - a few tbsp

Method:

1. Preheat oven to 180 degrees for 10 minutes.

1.1 Cut berries into smaller pieces. Add a tbsp of flour to the cut berries and toss them well. Reserve a few for decoration.

2. Sift flour, baking powder, soda. Mix well.

3. Beat the eggs and sugar with the help of an electric beater till they become pale yellow in colour.

4. Add essence, butter/oil. Beat further.

5. Now add milk and flour and mix in stages.

6. Add blueberries at this stage.

7. Mix gently but thoroughly until you have no specks of flour.

8. Pour the batter into the cake tin and bake for 40/45 Minutes.

Sugar syrup:

Ingredients:

Sugar - 1/2 cup

Water - 1/2 cup

Blueberry crush - 2 or 3 tbsp

Method:

Boil sugar and water till sugar gets dissolved.

Allow to cool down. Add blueberry crush and mix well.

White chocolate ganache:

Prepare the ganache by pouring 1 part of hot heavy whipping cream over 3 parts of the white compound or white chocolate chips. Allow to cool down.

Blueberry cream:

Ingredients:

Whipping cream - as required

Blueberry crush - 4 tbsp

Method:

1. Take whipped cream in a bowl. Add the blueberry crush. Beat till stiff peaks are formed. Keep it in the fridge till use.

Assembling:

1. Cut the cake into 2 or 3 layers upon cooling.

2. Apply sugar syrup in the third layer. Spread the cream. Sprinkle blueberries(optional).

3. Repeat the same for the second layer 

4. Trim the crust off the first layer. Repeat the process.

5. Refrigerate for 10 or 15 minutes. This is called crumb coating.

6. Take the cake from the fridge and cover it with the whipped cream. 

6 1. Apply white chocolate ganache along the edge of the cake allowing to drip down the sides.

7. I applied berry crush in the middle.
