Tandoori roti (using tawa)

Tandoori roti - Traditionally tandoori roti is made using tandoor or clay oven. But this recipe is making use of tawa and a roaster grill. The recipe requires only fewer ingredients such as wheat flour,water, salt and oil. The dough is to be kneaded into a tight dough, rolled out and cooked over direct flame. Tandoori roti tastes best when it is hot, becomes slightly dense on cooling.  




Ingredients:

Wheat flour - I'm using organic wheat flour. Some recipes make use of wheat flour and maida in the ratio 1:1.

Salt - I'm using fine pink salt. White may also be used.

Water - required for kneading and brushing.

Oil - I'm using cold pressed sunflower oil for kneading and for brushing. Any other neutrally flavoured oil can be used. Ghee or butter can also be used.

Method:

1. Knead the flour, oil, water, salt mixture into a smooth, soft and a tight dough.

2. Allow to rest for a minimum of 30 minutes.

3. Roll out into slightly thicker rotis.

4. Brush water on one side of the roti.

5. Cook roti on the tawa.

6. Flip the tawa and cook the roti till done.

7. Smear oil or butter and serve with curry.

Accompaniments: Any veg or non-veg masala, kurma, saag goes well. I served it with a saag.

Storage: Keep it covered in the fridge and reheat in a tawa before serving.

Tandoori roti


Time Taken - 45 minutes for kneading and resting time + 30 minutes for cooking.
No. of servings - 11

1 cup = 200ml
1 tbsp = 15 ml/gm

Ingredients with measurements:

Whole wheat flour - 2.5 cups

Salt - as required

Water - for kneading and brushing.

Sunflower oil - 2 tbsp

Directions with pics:

1. Take the flour in a wide mouthed bowl.

2. Add salt and water.





3. Knead into a tight dough for 10 minutes.

4. Add oil.

5 Make the dough soft and smooth without cracks.





6. Allow to rest for 30 minutes.

7. Roll out into a slightly thicker roti.



8. Brush one side of the roti with water.

9. Cook the roti on tawa with watered side down.



10. When bubbles starts appearing, flip the tawa .\

11. Flip the tawa over direct flame such that non watered side of the roti gets cooked. Alternatively place the roti on a roaster grill (like i did) and cook both sides till done.



12. Remove and smear oil or butter and serve.
