Eggless custard cupcakes

Eggless custard cupcakes - Cupcakes are my families favourite, at least once in a week i bake cupcakes.I was doing my baking experiments in a microwave convection oven, bought 10 years ago, the results were not quite satisfactory. I don't know whether i didn't have the knowledge to use it for baking or cakes baked in a microwave convection oven doesnt have the texture or taste compared to the ones baked in an OTG. Then one fine day my husband wanted to get rid of the unit as it was too big for my kitchen and the buttons were not working, moreover i had to replace the transmitter once in every 2 years. He also didn't like the  food that was cooked or even reheated in a microwave  oven as he felt that it was not healthy. Then i convinced him to buy an OTG  to continue with my baking experiments. And voila the results were beautiful and now i have started baking breads also. I knew this custard cupcake recipe long back and i wanted to try this for a long time , but never tried. The cupcakes have turned out spongy and moreover my kids as usual liked them very much.





Key Ingredients: 

Dry - APF, Custard powder, baking powder and soda, sugar (brown or white), salt.

Wet - Milk, oil,vanilla essence, vinegar

Oil - Use any vegetable oil.

Method:

  • Sieve the dry ingredients together.
  • Mix  the wet ingredients .
  • Combine dry ingredients and the wet ingredients
  • Bake.

Storage:

The cupcakes can be stored in an air tight container in the fridge. for a day or 2.

Substitutions:

You can take wheat flour : all purpose flour in the ratio 1:1.The cakes will be little dense, if you are ok with it then go for it.

Variations:

I had vanilla-flavoured custard powder, so i used it. You can take whichever flavour you want.

Pre-Preparation:

Add 1 tsp vinegar to a  cup of milk. Allow to stand for 10 minutes.

Recipe:



Soft and moist vanilla flavoured eggless, custard cupcakes without frosting


Total Time Taken: Preparation time: 15 minutes + baking Time - 20 minutes = 35 minutes.

No. of servings: 6

1 cup = 200ml


Ingredients:

All purpose Flour - 1 cup

Baking Powder - 1 tsp

Baking Soda - 1/2 tsp

Powdered Sugar - 3/4 cup

Salt - a pinch

Vanilla custard powder - 1/2 cup

Milk - 1 cup

Oil - 80 ml

Vanilla essence - 1/2 tsp.

Directions:

1. Preheat the oven for 10 minutes at 170C. Line the muffin tray with muffin liners.

2. Sieve all - purpose flour, custard powder, baking powder and soda, salt. Take all the sieved flours in a wide  - mouthed bowl.



 

2..Add powdered sugar to the sieved flours.

3. Mix oil, milk with vinegar mixture, vanilla essence together.


3. Add wet ingredients to the dry ingredients.

4. Combine well with the help of a spatula by cut and fold method.

6. Spoon in the mixture into the moulds with liners till they are 2/3rd full.


5. Bake for 20 minutes at 170 C. Cool.
