Pottukadalai Urundai/Fried gram balls

Pottukadalai Urundai or Sweetened fried gram balls - A very simple and nutritious sweet that can be prepared with the ingredients available in the pantry. Fried gram dal/pottukadalai/varutha kadalai is used in chutney preparations, kurma to give volume, and to enhance the taste of the gravy. It is an excellent alternative to the expensive nuts such as badam , walnuts etc. Fried gram can also be used as a coconut substitute in curries and gravies. 1 tsp powdered fried gram mixed with 1 cup of milk ,boiled and sweetened with country sugar is a nutritious drink for growing children and pregnant women as it is rich in protein and folate.  Pottukadalai urundai can be prepared in the microwave oven itself, if you don't prefer the stove- top.

Fried gram, country sugar, cashews, raisins,cardamom ,ghee.

Shelf - life:

Stays fresh for 15 days at room temperature.

Substitution:

  • You can prepare similar urundai with sattu. Sattu is prepared by roasting black chickpea or black chana and powdered in the mill.
  • You can use normal white sugar in the place of country sugar.

Equipment used - Blender, Fry pan/ microwave oven.

Recipe:

Preparation time: 15 minutes

Ingredients:

Fried Gram - 1/2 cup

Country Sugar - 1/2 cup

Cardamom - 1 

Ghee - 2 tbsp to 1/4 cup

Directions:

1. Heat a fry pan. Add the fried gram, cardamom. Saute for a minute. Transfer to a plate. Allow to cool. Alternatively, microwave it for 10 seconds.

2. Put fried gram, sugar, cardamom in the blender. Powder until fine. Transfer to a wide bowl.

3. Heat ghee.Add cashews. Saute until golden. Pour it over the powdered fried gram mixture. Mix well everything with a spatula or by hand( if you can handle the heat).

4. While the mixture is still warm , start shaping them into balls with your hands by pressing them firmly.

5. Store it in an air-tight container.

Note:

  • It is necessary to shape the mixture into balls while it is warm . Otherwise it will become difficult to shape them. In such a case, warm the mixture in the microwave or in the stove-top, and then shape them into balls.
