Choco chip muffins

Choco - chip muffins - Ever since my OTG arrived I bake something new every weekend. Baking was rocket science until few years ago but not now. I wanted to try out choco chip cookies but if my kids see the choco chips in the pantry they wont leave it out.This muffins has egg ,yes i prefer adding eggs to cakes or cupcakes or muffins since it has got some nutritional value compared to eggless version. My family loves this muffin and the choco banana muffins, so I make them often. I always like to bake in small quantities. The recipe yields exactly a tray of choco chip muffins. 



Dry Ingredients:

Flour:  I'm using organic APF. 

Sugar : I'm using powdered white sugar. 

Baking powder is used.

Pink salt is used. White can also be used.

Dark Choco chips are used.

Wet ingredients:

Egg - Brown egg is used. White may also be used. However diet eggs will not yield good results.

Diary - Whole milk is used. Toned milk can also be used.

Oils and fats: Cold pressed Sunflower oil is used. Any other neutrally flavoured oil can be used.

Vanilla essence is used.

Method:

  • Sieve the flour with baking powder and salt.
  • Beat egg with sugar. 
  • Add oil, milk and vanilla essence.
  • Beat till combined. 
  • Add choco chips. Mix until combined.
  • Bake for 180°C for 22 minutes.

Storage:

Store it in an airtight container.

Equipments used: 

OTG, wide mouthed bowl, muffin tray, spatula, hand beater/ electric beater.

Total time taken: Preparation time: 25 minutes + baking time 22 minutes = 47 minutes.

1 cup = 200ml

Ingredients with measurements:

All-purpose flour - 1 cup

Baking powder - 1 tsp

Powdered sugar - 1/4 cup

Salt - 1/4 tsp

Egg - 1(large)

Milk - 1/2 cup

Oil - 1/6 cup

Vanilla essence - 1 tsp

Choco chips - 3/8 cup

Tip:

Use a spoon to add flour to the measuring cup and level the flour with the back of the spoon or a blunt knife for précise measurement. Use this tip not only for measuring flour, but also for all the dry ingredients.

Pre - Preparation:

1. Preheat the oven to 180°C for 10 minutes.

2. Sieve the flour along with baking powder and salt in a wide mouthed bowl.

Directions with pics:

1. Beat the egg adding sugar in stages till double the volume. I used hand- held beater.

2. Add milk, oil, vanilla essence. Beat till combined.

3. Mix dry ingredients with wet ingredients with a spatula by cut and fold method.

5. Spoon the mixture into a lined muffin tray, only 2/3rd full.(i know i filled to the max as there was some batter left)

6. Bake at 180°C for 22 - 25 minutes, or when a toothpick inserted into the muffin comes out clean.
