Choco banana muffins

Choco Banana muffins - Yummy eggless choco banana muffins. Whenever I have over ripened bananas, i either make banana halwa or banana cake or these choco banana muffins. This is a one bowl recipe, which can be made easily and are my kids favourite. The only fancy ingredient used in this recipe is choco chips which can be omitted if unavailable. The recipe is adapted from Yummy You tube channel. The channel has wide range of cake recipes with and without eggs and some dessert collections. Do check out the channel if you want to explore more cake varieties. I tried various recipes but this one turned out to be a hit.





Ingredients:

Dry:

Flours: I'm using organic maida or APF.

Others:

Baking powder, cinnamon powder, cocoa powder, choco chips, sugar are used.

Wet:

Over ripe bananas either red or yellow can be used.

Cold pressed sunflower oil is used. Any neutrally flavoured oil can be used.

Whole milk is used.

White vinegar is used.

Method:

Add vinegar to milk.

Sieve flour, baking powder, cocoa powder, cinnamon powder.

Powder sugar.

Mix ripe banana, sugar,oil, milk- vinegar mixture.

Add dry ingredients to the wet.

Add choco chips 

Mix everything slowly till combined. 

Bake in a pre-heated oven till done.

Storage :

Tastes great the next day.. Store it in an airtight container.

Substitutions:

  • White sugar can be replaced by natural cane sugar.
  • Vinegar can be substituted with lemon juice. 

Scaling:

The recipe can be doubled

Equipments Used:

A wide bowl, rubber spatula, sieve, muffin tray, OTG.

Recipe:



Yummy choco banana muffins with choco chips.

Total time taken : 50 minutes

No. of servings - 6

1 cup = 240ml

Ingredients in detail:

Dry:

APF - 3/4 cup

Baking powder - 1 tsp

Cinnamon powder - 1/4 tsp

Cocoa powder - 1/4 cup

Powdered sugar - 1/2 cup

Choco chips - 2 tbsp

Wet:

Yellow Banana - 2(medium) or red banana - 1

Milk - 1/3 cup

Vinegar - 1 tsp

Oil - 1/3 cup

Directions:

1. Preheat OTG at 180C for 10 minutes.

2. Sieve all the dry ingredients except choco chips and sugar.

3. Take a bowl mash bananas roughly with hand.

4. Add oil, milk-vinegar mixture, sugar.

5. Whisk until sugar is dissolved.

6. Add the dry ingredients.

7. Mix slowly till combined.

8. Add choco chips(optional).

9. Line a muffin tray.

10. Spoon the batter into the moulds until 2/3 full

11. Bake for 20 - 22 minutes till done.
