Nendrankai Chips

Nendrankai - A variety of raw banana originally from Kerala. The banana is supposed to be very nutrious than the other varieties and is versatile also. Ripe nendram bananas are steamed and mashed and are given to babies right from their 6th month.

It  helps in gaining weight. Nowadays nendram banana is available in powder form,for the kids. Not only that they can be used in all the recipes where raw banana is used. You can make stir curry, avial, kootu curry etc.

Nendram chips are very popular all over Tamil Nadu. One can see road side snack joints making chips outside the shop in a big kadai. That are sold in packets in provision shops also. Nothing beats the fresh nendram chips prepared at home in coconut oil. 





Key ingredients

Coconut oil, Nendrankai or unripe nendram banana,salt water, turmeric powder.

Nendrankai - Select unripe good quality Nendrankai. Ripe ones will not make good chips.

Coconut oil - Coconut oil brings out the real flavour of nendrankai.

Equipment:

Slicer

Pre-preparation:

Take  1/4 cup water, add 1/2 tsp salt and 1/2 tsp turmeric powder. Mix well. Keep aside.

Ingredients:

Unripe Nendrankai - 4

Coconut oil



Directions:

1.Heat coconut oil in a kadai.



2.In the mean time , till the oil gets heated, remove the skin of the banana with the help of a peeler.

3.When the oil has reached medium hot, drop a slice of banana, if it rises to the top, proceed to the next step, else wait till the oil gets heated up.

4.Place the slicer directly over the heated oil and keep on slicing, such that the pieces fall directly into the oil.

3. Fry till crisp, keeping the flame on medium - low.

4. Now, sprinkle some salt water that we had prepared earlier.

5. Wait till the sizzle subsides.

6. Remove the chips with the help of the slotted spoon into a paper towel. 

7. Store it in an air-tight container.





Notes:

  • I just had 2 bananas so i peeled it when the oil was getting heated up. If you have more bananas, peel the skin, put the bananas in water, till you use them. Take them out of water, wipe them with a cloth to remove all the wetness and use other wise the chips wont get crispy.
  • Sprinkle 1/4 tsp of salt water, if you pour the water, you will end up in catching fire.
  • Keep the flame medium low, if you keep it too low, you will get not so crispy chips, if you keep it high you will burn them, so adjust the flame accordingly.
