Vendakkai mor kuzhambu/ladies finger buttermilk curry



Vendakkai mor kuzhambu -  ladies finger sauteed and cooked with spiced buttermilk. This gravy is quite popular in Tamil Nadu and Kerala. It is prepared on special occasions.There are many ways of preparing mor kuzhambu , with vegetables, with steamed dumplings, with onion and garlic ,each state having its own version. This spiced buttermilk curry is also known as kadhi in the north .

Suggested Serving:

Mor kuzhambu is served with rice usually, though it is also with idiyappam or string hoppers in the Tirunelveli district.

Key ingredients

Ladies finger, lentils - tuvar Dal, Chana dal, rice, spices, coconut, fenugreek, and mustard seeds and chillies .

Buttermilk - It is better to use one-day-old buttermilk. A little sour buttermilk tastes yummy.

Oils - Coconut oil tastes best for seasoning.

Substitution:

Brinjal, ash gourd, Colocasia, can be used instead of ladies finger.

Variations:

Deep fry the ladies finger and add them at the end.

Equipment used:

Blender, saucepan/Kadai.

Pre-preparation:

Soak 1/2 tsp each of coriander seeds, cumin seeds, tuvar dal, chana dal, raw rice, 2 red chillies in 1/4 cup of water for 15 minutes.

Churn the buttermilk and keep it ready.

Recipe:

Total time taken - Soaking time 15 minutes +

Cooking time = 15 minutes = 30 minutes.

Ingredients:

Ladies finger - 5/6

Buttermilk - 2 cups

Turmeric powder -1/2 tsp

Salt to taste.

To grind:

Coriander seeds - 1/2 tsp

Tuvar dal - 1/2 tsp

Chana dal - 1/2 tsp

Raw rice - 1/2 tsp

Cumin seeds - 1/2 tsp

Green chillies - 2

Red chillies - 3

Grated coconut - 1/3 cup

Tempering:

Coconut oil - 2 tsp

Mustard seeds - 1/2 tsp

Fenugreek seeds - 1/2 tsp

Asafoetida/hing - 1/4 tsp

Curry leaves - 1 sprig

Directions:

1.Chop ladies finger into 2" pieces, removing the tip and the stalk. 

2.Heat coconut oil in a kadai/pan, add mustard seeds,when they splutter, add fenugreek seeds, curry leaves, asafoetida. Sauté till fenugreek seeds get golden.

3. Add chopped ladies finger. Saute till tender (sprinkle water if required). Add turmeric powder.



4.Take the soaked mixture (given under pre-preparation)in the blender ,add green chillies, coconut. Grind into a little coarse paste.



5. Add the paste to the sauteed ladies finger. Saute for a minute. Add buttermilk, salt. 

6. Cook till the mixture becomes frothy.



7. Remove from heat.

Note:

  • Switch off the flame when the mixture becomes frothy, else buttermilk will curdle.
  • You can also make mix 1 tsp of rice flour mixed with 1 tbsp of water and add at the end and cook for a few seconds for a more thicker gravy.
