Baby Corn Tawa Fry

Baby Corn Tawa Fry - Baby corn is marinated with spice powders and onion and roasted in a tawa. Tawa is an indispensable piece of equipment in our Indian cuisine. Be it the dosa of South India or Rotis of North India tawas holds an important place in every Indian kitchen. Tawa is usually a flat griddle or frying pan made from cast iron or aluminum and aluminum with non-stick Teflon coating. They are concave or normally flat and come in different sizes. Tawas come in round, square, and ribbed non-stick square grill pans used to make sandwiches.



A handful of shallots or a medium-sized regular onion is made into a paste with ginger, garlic, homemade coriander powder, garam masala, pepper powder, turmeric powder, red chili powder, fried gram dal, white crystal salt with a little water, and applied on thin, small, tender partially cooked baby corns and marinated for 30 minutes.
The marinated baby corns are fried in tawa till crisp along with curry leaves.
The fries are juicy inside with the crispier outside. Fried gram dal can be substituted with besan flour. Minimal oil is used for tawa frying, chekku groundnut oil is used for drizzling around baby corns, though any oil can be used.
 

Serving Suggestions:

Pulao, biryani, fried rice go well with the dish. It can be had as such as an evening snack. I served it with mushroom biryani.

Storage:

It can be stored in the fridge and reheated in the Tawa or in a microwave oven.

Substitutions:

  • The spice powders can be substituted with whole spices such as coriander seeds for powder, red chillies for chilli powder, and black pepper for pepper powder. 
  • Garlic cloves can be replaced with garlic powder and onion powder can also be used. 
  • In case of using whole spices, saute everything in a tsp of oil and then grind along with other ingredients.
  • Fried gram dal can be replaced with besan/chickpea flour

Variation:

Chop a medium-sized onion or a handful of shallots, saute it along with a few red chillies and a few cloves of chopped garlic and add them to the fries.

Recipe:


Deep-fried baby corns with desi masala coating

Total time took: 40 minutes

Ingredients with measurements:

Baby corn - 1 packet

Onion - 1 (medium)

Garlic - few cloves 

Fried gram dal - 1 tbsp

Spice powders:

Turmeric Powder - 1/2 tsp

Coriander powder - 1 tsp

Red chilli powder - 1 tsp

Garam masala powder - 1/2 tsp

Pepper powder - 1/4 tsp

Salt - to taste

Curry leaves - a sprig

Groundnut oil - 2 tbsp

Directions:


1. Boil water in a saucepan. Add baby corns to the boiling water.


2. Cook baby corns in boiling water with salt added for 3/4 minutes or till soft yet crunchy. 

3. Take onion, dried gram dal, spice powders, salt, garlic in a blender.

4. Grind to smooth paste.


5. Drain the water, wipe them with a cloth.

6. Marinate baby corn with the ground paste for 30 minutes.



7. Heat a Tawa, add a tbsp of oil, place marinated baby corns on the Tawa. Sprinkle some curry leaves.



8. Cook till the masala sticks to the corns, and all the sides get golden and crisp in medium to low flame.

9. Transfer to a plate and serve.


Note:

Cook baby corns only for a few minutes in the boiling water else the masala won't get absorbed.
