Ellu sadam/Sesame seeds rice

Ellu sadam - Black sesame seeds rice. Sesame seeds or Ellu is rich in calcium, reduces the risk of arthritis, contains healthy fats, anti oxidants, B vitamins, protein and fibre. Urad Dal used in the recipe is also rich in calcium, coconut is rich in essential fats and fibre. Ellu sadam is usually prepared on Saturdays in the tamil month of purattasi as a neivedhyam for lord Vishnu and sani. The dish also makes an easy and nutrious lunch box menu, pair it up with a vegetable kootu or stir fry for a wholesome meal.


Ingredients:

Black sesame seeds, whole white urad dal, chana dal, Mustard seeds, curry leaves, red chillies, peanuts, fresh coconut , tamarind, solid asafoetida, sesame oil are used.

Usually raw rice or pacharisi is used for neivedhyam purpose. In this recipe, cooked raw rice is used. SImilarly pink salt is used. Alternatively, fine sea white salt can also be used.

Method:

  • Dry roast sesame seeds.
  • Saute urad dal, red chillies, tamarind, asafoetida in sesame oil.
  • Add coconut.
  • Powder everything.
  • Mix with cooked rice and add seasoning.

Substitutions:

  • White sesame seeds can be used, if black sesame seeds are not available.
  • Dessicated coconut can be used, but fresh ones give better results.

Equipments used: Kadai/ frying pan, blender.


Recipe:

Ellu sadam

Cooked rice mixed with black sesame seeds powder and seasoned with dals and nuts

1 cup = 200ml


Ingredient with measurements:

Cooked Rice - required quantity

Black sesame seeds - 2 tbsp

Urad dal - 2 tsp

Red chillies - 4 or 5

Tamarind - gooseberry size

Coconut - 2 pieces or chillu

Fine pink salt - to taste

Asafoetida - a pinch

Tempering:

Sesame oil - 2 tbsp

Mustard seeds - 1/2  tsp

Urad dal - 1 tsp

Chana dal - 1/2 tsp

Red chillies - 3 or 4

Curry leaves - a sprig

Peanuts - 1 tbsp

Directions with pics:

1. Heat a kadai/pan, add sesame seeds. let it crackle. Transfer to a plate.


2. Heat oil in the same kadai/pan, add urad dal, asafoetida when it turns golden, add tamarind, red chillies. Saute for a minute.Switch of the flame. Add coconut. Give a good stir.


3. Allow to cool down.Transfer to a blender. 

4. Add sesame seeds to the blender.

5. Powder everything. It need not be very fine.

6. Take cooked rice in a wide bowl or plate, add salt, powder(required amount) mix thoroughly with the help of a flat ladle.

7. Heat a seasoning pan/kadai, add mustard seeds, when it crackles, add urad dal, chana dal, peanuts, when dals turns golden, add red chillies, curry leaves.

8. Add to the rice.



Notes:

  • Rice should not be mushy, then the powder will not spread evenly.
  • Some people don't use tamarind for neivedyam so avoid it if you want.
  • Using coconut is also optional.
