Nutri chapathi

Nutri Chapathi - Whole wheat flour mixed with soya flour and kneaded by adding whey water. Chapathis made by using whey water is nutritious and stays soft for a longer time. Whey is the residual liquid obtained after milk gets curdled and strained. It is greenish-yellow in colour and has excellent nutritional value. It boosts digestion. The whey I'm using here is obtained after making a paneer. Whey can be had as it is or can be incorporated with other ingredients like I'm using whey water to knead chapathi dough. In addition to this, I'm adding soy flour to increase the nutritional value of the chapathi. 




Ingredients:

Whole wheat flour - This could be either homemade or store-bought.

Soya flour - I'm using store-bought texturized soy flour. Soya flour made from soya beans is still more good for health.

To make Nutri flour at home :

Mix 200 gms of dried soya beans(White or red) and 100 gms of chickpeas to 1 kg of wheat grains. Sundry and give it in the mill to make flour. 

Salt - Fine pink salt is used. White can also be used.

Oils and fats - Any neutrally flavoured oil for kneading the dough. Cold-pressed sunflower oil is used. Ghee is used for applying.

Method:

  • Take wheat flour and soy flour along with salt in a kneading bowl or a wide mouthed bowl.
  • Add whey water. Mix well. 
  • Add oil and knead into a soft and pliable dough.
  • Allow resting for a minimum of 30 minutes.
  • Roll it into chapatis and cook.
  • Apply oil/ghee on both sides of the chapathi.

Accompaniments: 

Masalas, kurmas, curries go well with chapatis. I served it with paneer masala

Variation:

Vegetables like carrot or cabbage can be grated or cottage cheese can be added for additional value.

Substitution:

Use 1/4 cup of soya bean flour for 1 cup of wheat flour and make chapatis. Soya bean flour is prepared by using dried soya beans(legumes).

Ingredients with measurements:

Whole wheat flour - 3 cups

Soya flour - 3 tbsp

Oil - 3 tsp

Salt - to taste

Ghee - for applying

Whey water - for kneading.

Directions:

1. Take 3 cups of flour in the kneading bowl. Add 3 tbsp of soya flour and salt.

2. Add 3 tsp of oil and 2 cups of whey water.

3. Knead it into a pliable and crack-free dough, for 10 minutes.


4. Cover the dough and allow to rest for 30 minutes.

5. Pinch big lemon-sized balls from the dough and roll it into chapathis.


6. Put the chapathi on a heated tawa, bubbles will start appearing at various points, indicating one side has been cooked.

7. Flip to the other side, Apply 1/2 tsp of ghee or oil,  you can also notice some brown spots on the cooked side.

8. Chapathi will start puffing up, indicating that it has been cooked.

9. Remove from Tawa, Apply ghee/oil and serve with curry or kurma or dal and vegetables.
