Corn flakes mixture

Corn flakes mixture - I certainly don't prefer corn flakes for the breakfast but i cannot resist crunchy, spicy, little sweeter cornflakes mixture for the snack time. The deeply fried lighter cornflakes along with tossed spice powders and nuts and raisins is hard to resist. We usually buy cornflakes mixture from outside. I had some cornflakes in my pantry which I bought to serve along with soups. I thought of giving this mixture a try and it turned out as l expected.

Ingredients:

Cornflakes - Not the ready to eat ones

Spice powders like red chilli powder, fine rock salt, turmeric powder, chaat masala(optional), hing powder, garlic(optional)

Nuts and dry fruits - Cashewnuts, peanuts, raisins.

Sweetener - White sugar or Brown sugar (granulated).

Oils and fats - Refined sunflower oil is used. Any neutrally flavoured oil works best.

Herbs - Curry leaves.

Method:

Deep fry cornflakes, peanuts, Cashewnuts, raisins, garlic and curryleaves.

Mix everything.

Toss with spice powders and sugar.

Store it in an airtight container.

Variations:

Pepper powder can also be added. Almonds can be added.

Equipment used: A large kadai, ladle.

Savoury deep fried cornflakes tossed with nuts and spice powders

Ingredients with measurements

Oil - as required

Cornflakes - 100 grams

Peanuts - 1 tsp

Raisins - a few

Cashewnuts - 1 tsp

Spice powders:

Fine rock salt - 3/4 tsp

Red chilli powder - 1/2 tsp

Turmeric powder - 1/4 tsp

Chaat masala -  a pinch

Asafoetida - 1/4 tsp

Sweetner:

White granulated sugar - 1/4 tsp

Directions:

1. Heat oil in a kadai.

2. Just drop a corn flake, if it blooms, the oil is ready for frying.

3. Add a handful of cornflakes in the hot oil, fry till it blooms completely.

4. Drain the oil in a tissue paper.

5. Repeat with the rest of the cornflakes.

6. Add peanuts, cashewnuts, curry leaves, raisins and fry till cashews are golden, curry leaves are crisp and raisins double in size, Take the fried cornflakes, nuts, raisins and curry leaves in a wide bowl, add all the spice powders and the sweetener.

7. Toss well till the powders coat the cornflakes evenly.

8. Store it in an airtight container.
