Pineapple Rava Kesari/ Pineapple Sheera

Pineapple Kesari - Sweet dish made with sooji, pineapple and sugar. Everybody would be familiar with rava kesari which is served in marriages and functions. Rava Kesari in which pineapple is added and cooked is pineapple rava kesari. Most of the pineapple rava kesari i have eaten contain only pineapple essence and artificial flavour. But this recipe contains real chunks of pineapple.

Ingredients:

Fruits and veggies: Ripe pineapple is used

Cereal - Rava or sooji is used. Normal upma rava is used

Sweetener -  White granulated sugar is used . Nattu sakkarai or natural cane sugar can also be used

Oils and Fats - Ghee is used. A combination of ghee and oil can be used. Any neutrally flavoured oil alone can also be used.

Nuts and dry fruits: Cashews, raisins, cardamom, saffron is used

Optional:

Essences: Pineapple essence, cardamom essence is used

Food colour: Yellow food colour is used.

Method:

Saute pineapple in ghee with sugar.

Roast rava in ghee.

Cook rava, pineapple in water

Mix sugar, saffron, colour

Saute dry fruits and nuts in ghee.

Mix seasoned ghee with rava mixture.

Add essence.

Variations:

Tutti fruity pineapple kesari:

Sprinkle a hand ful of tutti fruity along with rava in the recipe.

Storage:

It can be stored in the fridge for a day only. Reheat in a microwave before serving.

Equipments used: Kadai/ Sauce pan.

Recipe:


Pineapple Kesari

Sweet dish made with sooji, pineapple and sugar

No.of servings - 4

1 cup = 200 ml

Ingredients with measurements:

Rava - 1 cup

Finely chopped pineapple - 1/4 of 1 whole pineapple

Sugar - 1.25 cups

Water - 3.5 cups

Ghee - 1/4 cup +  2 tbsp

Cashewnuts- a few

Raisins - a few

Cardamom - 2 pods

Saffron - a few strands

Yellow food colour - a pinch(optional)

Pineapple essence - 1/4 tsp(optional)

Directions:

1. Chop pineapple into bite sized pieces.

1.1 Heat a tsp of ghee and roast rava till it emits a nice aroma.

2. Heat a tsp of ghee in a kadai, add 1 tbsp of sugar and saute pineapple pieces till sugar melts.

3. Add 1/4 cup of water and cook pineapple pieces till soft. 



4. Add remaining water, when it boils, add rava while stirring continuously.

5. Add remaining sugar, saffron, food colour(optional).



6. When rava is cooked and everything comes together, add remaining ghee, (reserving 2 tsp for seasoning) and cook till well incorporated.

7. Remove from from fire.

8. Heat a seasoning pan, add 2 tsp of ghee.

9. Add nuts, dry fruits,cardamom,

10. Saute till golden. Add to the rava mixture.

11. Add essence(optional).

12. Mix well and serve.
