Eggless Pancakes



Eggless Pancakes - I'm not a big fan of pancakes, but my kids are. They love to have them with choco syrup or with nutella spread which is called as dora cakes. Pancakes are similar to our instant uthappams but they are sweet in taste. Savoury pancakes can also be made which i 'll share very soon. Usually pancakes contain eggs they help in leavening the batter which helps the batter to rise better and and make the pancakes spongy. They are very easy to make and can be made for the breakfast in no time.






Ingredients :

Dry:

APF - I'm using organic maida. Any maida can be used.

Sweeteners: Jaggery powder is used. Natural country cane sugar, honey or even white sugar can also be used.

Leavening Agents: Baking powder is used. 

Diary: Skimmed milk powder is used. Diary whiteners can also be used.

Oils and fats: Butter is used. Any neutrally flavoured oil can be used.

A pinch of fine pink salt is used.

Wet:

Water is used to make the batter.

Vanilla essence is used. Vanilla extract can also be used.

Hershey's choco syrup is served along with the pancake.

Method:

Sieve the dry ingredients once.

Add wet ingredients excluding chocolate syrup and mix well.

Heat uttappam or pancake tawa.

Pour the batter in the moulds.

Smear butter around the batter in the moulds.

Cook till golden.

Flip the pancake and cook.

Serve with chocolate syrup

Storage:

The batter can be refrigerated and used.

Serving Suggestions:

The pancakes are usually served with maple syrup, honey, choco syrup, caramel syrup, butterscotch syrup, home made strawberry sauce, blue berry sauce or even choco ganache.

Substitutions:

Milk powder can be omitted completely if not available. Use whole milk or toned milk instead for mixing the batter. Do not use water for mixing in this case.

Whole wheat flour can be substituted for maida.  A combination of wheat flour and maida in the ratio 1:1 can be used. Use 1/4 tsp of baking soda in addition to baking powder in this case.

Multi grain atta can also be used. Use multi grain atta and maida in the ratio 1: 1. Use 1/4 tsp of baking soda in addition to baking powder in this case.

Equipment's used:  Uttapam tawa/skillet, a wide bowl for mixing.

Eggless pancakes


Eggless pancakes with choco syrup
Total time taken: Under 30 minutes.
No. of servings - 8
1 cup = 240 ml

Ingredients with cup measurements:

All purpose flour or maida - 1 cup

Skimmed milk powder - 1/2 cup

Baking powder - 1 tsp

Water - for mixing

Jaggery powder  - 4 tbsp

Fine pink salt a pinch

Vanilla essence - 1 tsp

Butter - 1 tsp plus for generous amount for cooking

Hershey's choco syrup. - A 10 rs. packet.

Directions with pics:

1. In wide mouthed bowl, take 1 cup of APF, skimmed milk powder, baking powder, salt.

2. Sieve the ingredients once.

3. Add water to get dosa batter consistency. 

4. Mix vanilla essence.

5. Allow the batter to rest for 15 minutes.




6. Heat a dosa tawa or an uttapam skillet or a pancake skillet.

7. Add a tsp of butter in all the moulds.

8. Pour batter in the moulds.

9. Keeping the flame low, cook till you see tiny holes in the pancake and edges become golden.

10. Flip the pancakes over.

11. Cook till golden.

12. Repeat till the batter gets finished.

Serving:

1. Arrange the pancakes one above the other in a plate.

2. Pour chocolate syrup over the pancakes generously.

Variations:

Dora cakes:

1. Cook all the pancakes as per the directions.

2. Apply nutella spread or any other spread on one side of the pancake.


    



3. Place another pancake such that the spread is sandwiched between the 2 pancakes.
