Palakottai Vadakkal(one pot)/ Jackfruit seeds stir-fry

Palakottai Vadakkal - Jackfruit is a highly nutritious one that can be eaten as a fruit or as a vegetable(palakkai). Not only the meat but even the seeds are considered to be nutritious. We usually make use of the seeds in sambar, kootu, or consume it as it is after roasting, but making a stir fry with seeds was new to me. I have slightly modified palakottai varuval recipe for the same and the result was yummy. 



How to prep the seeds :

Wash the seeds thoroughly, leave it as it is in the counter for 2 or 3 days. Remove the white coat by peeling, or remove the white skin after pressure cooking for 5 or 6 whistles. I'm using dried seeds.

What is required:

Jackfruit seeds: Prep as described above.

Onion: Shallots or Bellary onions (big ones) can be used.

Spices: Ginger, garlic, green chillies, saunf is used.

Spice powders: Homemade sambar powder, red chilly powder, coriander powder, pink salt, hing is used.

Herbs: Curry leaves are used.

Oils and fats: Cold pressed groundnut oil is used. Sesame oil or any other refined oil can also be used.

Method:

Pressure cook the seeds.

Saute with veggies, spices and spice powders.

Garnish.

Accompaniments:

Goes well with rasam Sadam, sambar Sadam and curd rice

Variations:

A tbsp of shredded coconut can be added finally.

Add a medium-sized tomato while sauteing.

Equipment used: 3 ltr pressure cooker/ pan. 

Recipe:


Palakottai vadakkal

Stir-fried jackfruit seeds.

Total time taken: 30 minutes.

No. Of servings - 4

1 tsp - 5 ml 

Ingredients with measurements:

Cold-pressed groundnut oil - 1 tbsp

Jack fruit seeds - 25

Onion - 1 ( big ).

Ginger - 1"

Garlic - 6 cloves.

Spice powders:

Sambar powder - 1 tsp 

Coriander powder - 1 tsp

Red chilli powder - 1 tsp

Turmeric powder - 1/2 tsp

Hing - a pinch 

Tempering:

Mustard seeds - 1/2 tsp

Saunf - 1 tsp

Green chillies - 2

Curry leaves - 1 sprig.

Directions:

1. Pressure cook the seeds for 7 to 8 whistles.

2. Remove the bits of white skin present. Transfer the seeds to a bowl.

3. Heat oil in the pressure cooker.

4. Chop green chillies, onions, ginger and garlic.

5.  Add all the ingredients given under 'tempering'.

6.  Add chopped onions, when they become pink, add ginger, garlic.

7. Add cooked jackfruit seeds.

8. Add all the spice powders. Toss well

9. Sprinkle 1 or 2 tsp of water, cover and cook for 5 minutes on a low flame.

10. Remove from heat and serve.
