Vendaikkai pakoda/Bhindi pakora/Ladysfinger fritters

Vendaikkai pakoda - My kids love to have something crunchy for their lunch like murukku, thattai something that sort. Pakoda holds an extraordinary place on their list. It is always peanut pakoda (store-bought) finding its place during lunchtime. But today for a change I made vendaikkai pakoda for their lunch box. Let's see how to make this



For this recipe we need

Lady's finger

Gram flour

Rice flour

Hing

Salt - I use rock salt

Red chilli powder - I use pro-nature chilli powder which is quite hot.

Turmeric powder - I use pro-nature turmeric powder

Curry powder

Water

Oil - Any refined oil or cold-pressed groundnut oil can be used.

Recipe




Time taken - 25 minutes

A regular spoon is used.

Ingredients with measurements:

Ladies' finger- 10/12

Gram flour/Besan - 2 or 3 tbsp or 1 small ladleful

Rice flour - 1 or 1.5 tbsp or 1/2 ladle

Curry leaves - a sprig

Spice powders:

Hing/asafoetida - 2 pinches

Salt - to taste

Turmeric powder - 1/2 tsp

Red chilli powder - 1/2 tsp

Water - to sprinkle

Oil for deep frying

Directions:

1. Cut ladies' fingers breadthwise thinly.

2. Add all the flour, and spice powders. Mix thoroughly, if required sprinkle some water for the powders to get coated evenly.

3. Rest for 5 minutes, and heat oil in a kadai.

4. Deep fry the coated ladies' fingers till golden and crisp.

5. In the same kadai, drop a few curry leaves and fry them till crisp.
