Mudakathan keerai rice

Mudakathan keerai rice - I usually keep one or two readymade powders handy in case when i run out of veggies or i don't feel like cooking elaborate meals. Whenever I go to super market I buy keerai/ greens podi/ powder that can be mixed with rice, and had with vegetables.  
It is very simple to make,can be mixed with the left over rice too. Apt for the lunch box.




Key ingredients:

Mudakathan keerai powder 

Cooked rice

Peanuts

Carrot

Oil

Salt

Red chillies

Curry leaves


Recipe:

Ingredients with measurements:

Cooked  rice  -1 cup

Mudakathan keerai  powder - 2 level spoons

Carrot  gratings  from 1/2 carrot

Peanuts / cashew - 1 tbsp

Salt - to taste

Directions:

1. Add keerai powder to the cooked rice. Mix well.

2. Check for the  salt.

3. Heat oil, add red chillies, curry leaves, carrot and peanuts. 
Saute for 2 minutes.

4. Add to the rice. Mix well  and serve with raitha and papad.
